Quinoa, a grain that originated in South America, is considered a superfood because it contains more protein than most grains. It has a nutty flavour, that tastes wonderful fresh garden green and most of the cheeses. it's a great gluten-free alternative to many grains like wheat and rice. It’s not a salad it’s a complete nutritious meal.

1 ¾ cup

Uncooked quinoa

1 cup

Cherry tomato

½ cup

Chopped fresh mint/ parsley

½ cup

Raisins

¼ cup

Pecans

¼ cup

Chopped cucumber

¼ cup

Scallions

¼ cup

Fresh lemon juice

¼ cup

Chopped green onions

2 tbsp

Extra-virgin olive oil

1 tbsp

Minced fresh onion

2 tsp

Salt

½ tsp

Crumbled feta

½ tsp

Freshly ground black pepper

¼ tsp

Main Methods:

  1. Combine water and quinoa in a medium saucepan; bring to a boil

  2. Pour water into a medium saucepan and bring to a boil.

  3. Add the quinoa and 1 teaspoon of salt, lower the heat and simmer

  4. Covered, for 15 minutes, until the grains are tender and open.

  5. Drain, place in a bowl and immediately add the lemon juice, olive oil.

  6. In a large bowl, combine the scallions, mint/Parsley, chopped onion, chopped cucumber, chopped tomatoes, raisins and pecans.

  7. Add 1 teaspoon of freshly ground pepper.

  8. Check salt, if it is less than add salt according to your taste.

  9. Add the quinoa and mix well.

  10. Carefully fold in the feta and taste for seasonings.

  11. Serve at room temperature or refrigerate and serve cold.

  12. Serve chilled or at room temperature.
