Chopped spinach

250- 300 gm

Baby potatoes (boiled and cubed)

Yogurt

Garam masala (optional

Salt

to taste

Chopped green chilli

Method: -:

  1. Heat water in a saucepan, and when it comes to a boil, drops in the spinach leaves.

  2. Bring the water back to a boil and let the spinach cook for a minute, then turn off the heat, drain the leaves and add to a blender.

  3. Puree the leaves into a smooth paste. If needed, add a small amount of water to help the blender blades move.

  4. Heat the oil in a saucepan or wok.

  5. Add the cumin seeds and let them crackle.

  6. Add the chopped onions and sauté it until onions get translucent.

  7. Now add chopped tomato and cook until you get a gravy consistency.

  8. Add seasoning and mix well and cook for a while.

  9. Add chopped chilli at this point.

  10. Add the potato cubes, stir to mix and let them cook for a couple of minutes in the sauce.

  11. Add the spinach puree and yogurt and mix well. Adjust salt to taste.

  12. If using garam masala, stir in at this point.

  13. Cook for a while and turn off heat.

  14. Serve with naan or rice.




Notes:

  1. If using frozen spinach, thaw the spinach and microwave it, and then blend.

  2. To make this recipe rich you could add cream to it.
