This Sunny Spinach Pie looks like a Sunflower and it’s perfect for Brunch and teatime. It’s also extremely easy to make. Perfect recipe to impress and surprise your guests with a great taste and presentation. Monsoon and winters are best time to have it.

Main Methods:

  1. Mix all the ingredients for the dough and work the dough until it becomes uniform.

  2. Cover it with damp cloth/plastic wrap while preparing the stuffing.

  3. Chop and Boil the spinach and squeeze it to eliminate the water.

  4. Mix it with the ricotta cheese.

  5. Add the egg with Add the grated parmesan cheese, salt and pepper.

  6. Amalgamate all ingredients. Set aside briefly

  7. Before doing anything Preheat the oven to 180°C/356°F.

  8. Unwrap dough from the plastic and divide it into two equal parts.

  9. Using a rolling pin, roll out each dough ball to create two circles 30 cm in diameter each.

  10. Place the 1st dough circle on baking paper.

  11. Sprinkle breadcrumbs over-top to help absorb the moisture of the filling and to keep the dough dry.

  12. Distribute the filling on the circle that was just sprinkled with breadcrumbs.

  13. Place one large dollop at the center of the circle and spread the remainder in a ring around the dough.

  14. Sprinkle the filling with grated Parmesan.

  15. Now, cover with the second circle of dough.

  16. Seal the edges with your hands, and then use a fork to press.

  17. Place a small bowl in the middle of the pie and press lightly to make an indentation.

  18. Use your fork to press lightly.

  19. Cut the dough into pieces approximately 2 cm thick, keeping it attached at the center.

  20. Twist each slice and continue until each slice is twisted.

  21. Bake the spinach pie at 180°C for 30 minutes or until golden.

  22. Serve with your choice of dip/sauce.
